- 1 teaspoon 1 teaspoon ground ginger
- 1 teaspoon 1 teaspoon kosher salt
- 4 item 4 large eggs, at room temperature (used duck eggs)
- 2 cup 2 cups granulated sugar (used demerrera sugar)
- 1 cup 1 cup vegetable oil
- 1 cup 1/3 cup well-shaken low-fat buttermilk (used 1 cup buttermilk substitute)
- 1 pound 1 pounds carrots, grated on the large holes of a box grater (about 6 cups)

How to make it

Heat the oven to 350°F and prepare the appropriate pan.
