- 2 cup canned black beans, drained and rinsed
- 4 cup gold potatoes, diced
- 1 tablespoon olive oil
- ½ teaspoon kosher salt
- 3 tablespoon lime juice
- 1 teaspoon ground cumin
- 1 tablespoon aji amarillo paste
- 1 each red onion, cut into wedges

How to make it

Heat the oven to 425°F. Toss the black bean, potato, and red onion with olive oil, salt, and lime juice, cumin, aji amarillo paste on a sheet pan.
