  • 3 cup corn kernels
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • 3 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1 tablespoon aji amarillo paste
  • 1 each red onion, cut into wedges

How to make it

    Heat the oven to 425°F. Toss the black bean, corn, and red onion with olive oil, salt, and lime juice, cumin, aji amarillo paste on a sheet pan.
