  • 3 cup corn kernels
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • 3 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1 tablespoon aji amarillo paste
  • 3 cup cooked buckwheat groats
  • cup low-sodium vegetable broth
  • 1 cup diced onion

How to make it

    Heat the oven to 375°F. Combine the black bean, corn, buckwheat, vegetable broth, onion, olive oil, salt, and lime juice, cumin, aji amarillo paste in a baking dish.
