  • 4 cup eggplant, cubed
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • 3 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1 tablespoon aji amarillo paste
  • 3 cup cooked quinoa
  • ¾ cup low-sodium vegetable broth

How to make it

    Heat the oven to 375°F. Mix the quinoa, black bean, eggplant, vegetable broth, olive oil, salt, and lime juice, cumin, aji amarillo paste in a baking dish.
